Part of my 30 Before 30 list is to get better at cooking and to cook more. These Asparagus fries aren't unique and I cannot claim them as my own recipe, but I will share them because I'm sure not everyone knows about them. And, the reality is that everyone needs to know about them. They're so simple to make and very delicious.
So, here's what you need to do (makes half a bunch) :
1.) Preheat your oven to 450 degrees.
2.) Get out three plates or bowls. Flour, panko and two whisked eggs go on their own plate/bowl. I used plates with lips because it is easier to roll the spears in them. Think of these as dipping stations for your asparagus.
3.) Roll each asparagus spear in the flour, eggs and panko. Do it in that order.
4.) Lay your asparagus on a cooking sheet and shred a little bit of parmigiano-reggiano on your panko'd spears.
5.) Bake for 10-15 minutes or until the spears are soft and the breading is crispy. Each over is different so keep an eye on them after the 10 minute mark.
